Tips & Changes:
(If you want to eat this with noodles) The suggestion I would make would be to add an additional 8oz can of tomato sauce and thin it a little with water.
Marinara Sauce Recipe (Same as pizza sauce):
1-28oz can crushed tomatoes (or whole peeled and blended well)
2 tbsp olive oil
3-4 cloves garlic
1/2 tsp oregano
2 tbsp fresh oregano
1/4 tsp salt (or salt to taste)
1/8 tsp black pepper
1/2 tsp Red pepper flakes
a pinch of MSG
Directions (for marinara sauce):
Warm all of the ingredients on the stove for about 10- 15 minutes on a very low simmer)
Alfredo can be made with any noodle, and with or without meat. It's an easy weeknight meal, and the sauce can even be used on pizza! See below for tips on adding *broccoli*
Tips & Changes:
You can use any noodle you want to use, I use rotini because it holds onto sauce better, truthfully, because it's what I use for most pastas. Experiment! See what works best for you.
I don't always have chicken broth on hand, but I always have some sort of boullion in the cupboard. Chef John uses 2 cups of chicken broth, I substitued that with 2 cups of water and 1 tbsp of boullion.
To Salt, or not to Salt?
I would add a *little* salt during cooking, but I don't really recommend adding salt until the end (or until plated). Cheese is very salty, and it's important to taste the pasta for AFTER cheese is added.
Want to add *Broccoli*?
Bring cooking liquid to a boil, add broccoli and turn the heat to Medium-low. Let the broccoli sweat for 4-5 minutes. After, move broccoli to a collander and strain (save the broth), rinse broccoli with cold water, immediately. This will keep it from over-cooking. set aside until you are ready to use it.
After cooking the broccoli, you should have about 1 cup of broth left to start cooking your alfredo sauce.
If you want a looser more watery pasta sauce, feel free to add a little more liquid (water/boillion or chicken broth). Do this with little bits of liquid and only after your sauce has cooked down and thickened a bit.
If you are vegetarian, I am pretty sure that veggie broth is just as good of a substitute!
Alfredo can be made with any noodle, and with or without meat. It's an easy weeknight meal, and the sauce can even be used on pizza! Nut Allergy? substitute with Toasted sesame/ sunflower/ pumpkin seeds/ garbanzo beans/ or roasted soy beans. These may produce a similar "nutty"result.
Tips & Changes:
Measurements are really up to you, the recipe said 1 bunch of basil, but the only bunches I could find were small, so I used about 3 to count as "1"
I like garlic, so I used about 4-5
I added some MSG as well, just a brief sprinkle in the sauce only (about 1/4 to 1/8 tsp)
Recipe makes enough sauce for 1lb of pasta, you might not even need all of it. Make it right for you
Don't forget to add a good amount of salt to the pasta water!
Save about 3 tbsp of "pasta water" to use in the final mixture, and add some extra Parmesan right before serving.
