This is such an eady & cheap weeknight favorite. Sure, this recipe is a little more involved than adding a can of "cream of mushroom to some hamburger meat, but I promise, it's worth it!
Ingredients:
1lb box of noodles (*traditional choice= egg noodles*, cavatappi, rotini, shells, macaroni)
1lb hamburger meat
2 tbsp butter
2 tbsp flour
1 cup milk (or more for thinning sauce)
1/2 lb mushrooms (large dice)
1/4 yellow onion
2 medium cloves garlic
salt & pepper to taste
cayenne pepper to taste
green onions (optional: garnish)
Directions:
Boil a large pot of water, then add salt and your noodles. Cook & strain, but DO NOT rinse them! Set aside.
In a medium sauce pan set to med-high heat, add onions, garlic, and mushrooms. Let sweat about 2 minutes covered.
Add hamburger meat, dice into small pieces with spatula.
Once the meat and your veggies are cooked through, add butter, stir well.
Next add flour, stir well.
Finally, add milk. Make sure to keep mixing, and mix in the milk in small batches (about 1/3 cup at a time). If you want a thinner sauce add more milk.
Add salt, pepper, and a pinch of cayenne
Add the noodles and green onion garnish & viola!
This lasagna recipe reminds me of the old "Costco" version.
Tips & Changes:
I always omit the sugar, and instead of tomato paste & tomato sauce I use an extra can of crushed tomatoes and about 1/2 cup of water (or more as desired, sauce thickens well).
If you have mushrooms or Umami seasoning. Use them!
I used about half of the ricotta mixture.
I used "oven-ready" noodles and these were such a time saver, I highly recommend them. 👌
I didn't have a block of mozzarella or any fresh herbs on hand, so I used string cheese and dried herbs. 🙃 It tastes delicious either way, honestly.
Use a pinch of cayenne to kick it up a notch. 🌶
