AAEC 2580 - Applied Microeconomic Principles

This course is an introduction to the economic principles through which we can understand why people, business, government, and society as a whole behave as they do. The concepts covered throughout this course will provide you with a solid foundation in economic thinking and new tools for conceptualizing and analyzing real world issues. (Taught every fall, 2015-2023)

AAEC 3600 - Economics of Food Policy

This course analyzes domestic food policies, focusing on post-farm issues facing manufacturers, distributors, retailers, and consumers.  Students learn how to think like an economist in analyzing the broad array of food policies in the United States and engage in discussions pertaining to real-world, current food policy proposals. (Taught every spring, 2015-2023; formerly named "Applied Macroeconomics and Food Policy")

AAEC 8140 - Consumer Demand Theory

This PhD-level course focuses on the microeconomic analysis of individual and household behavior. Each theoretical topic is accompanied by an empirical application using real-world data and computer software. The course covers approaches applicable to demand research in the areas of food, environment, recreation, agricultural inputs, the developing world and the developed world. (Taught every other fall in the odd year, 2015-2023)
