Thistle Doo is the name we have given to three acres of land on the Essex-Suffolk borders. Thistle Doo is not at the start of its life, because every piece of land has its own history. But it is at the start of a new growing journey, a new chapter. What is currently mainly thistles is becoming a self-sustaining food forest and a place to experience the abundance of what the earth can offer us when we work on harmony with it.
