Making delicious food for others has given us an opportunity to spread joy to people all around town. We also offer catering services for events, and have options for everyone's savory cravings and taste buds.
The Loaded Spud food truck has always been a dream before our start in 2023 in the Castle Rock, Colorado area. Remembering as a child, on Friday nights with the family, we would eat loaded baked potatoes of all kinds. This was our inspiration to take an ingredient so simple and basic, and transform it into something so creatively delicious, to share. We love getting to build our sense of community by serving it up in a food truck. Our end goal in this business, is to always leave the people we encounter with a smile on their face!
Meet the Owner
My name is Abigail (Abby) McQuistion, and I am a returning student at ACC (Arapahoe Community College). I completed the EMT program in Fall of 2022. I am currently working on my next goal of becoming a paramedic through school and work experience. I am a mother of 2, or 3 if you count my husband 😉 and they are my world, as well as biggest motivation in all areas of my life! I wish I could say I had an extensive list of hobbies, but being a mother is my main hobby as well as cooking a delicious homemade meal. Making food for others has always been a love language of mine. If I can fill a belly with something delicious, then everyone is happy! Helping people in life can come in many forms, whether it's taking care of my patients or serving my customers.
