Fly Sparge at 168F
Boil 60 minutes
Ferment @ 62 °F - knock out
65F (free rise) until SG < 1.015
70F until terminal gravity
Carbonate @ 2.5 Volumes
CA 124, Mg 10, Na 6.6, Cl 75, SO4 150
For the Incognito addition, collect 1 pint of boiling wort at Flameout, stir in Incognito into Pint, after 30 -60 seconds, add cold sanitary water to Mix to cool it down to < 80F.
Add this mix directly into the fermenter.
I add the dry hops after I have harvested the yeast in two additions. How and when you add the dry hops will drastically affect the flavor!
