Kale

The mighty kale has been getting a lot of press lately for the (re-)discovery of its amazing health benefits.

Kale juice is an amazing source of easy to assimilate iron. It is high in vitamin K, vitamin C and carotenoids. It has calcium, copper and isohiocyanates. The nutrients in kale promote healthy eyes and skin, fight cancer, boost immunity, act as an antioxidant, build healthy bones, help keep blood pressure down, support proper growth, aids in energy production, act as an antimicrobial and detoxifies the body.

#Fun Fact: Kale needs to be exposed to winter frosts so some of the plant's starch can be transformed into sugar.
