This curry originates in Malabar, a Southwestern region of India which was the "Spice Garden" of the ancient world. This region is still famous for peppers, cloves and cinnamon from which traders used to travel from the Middle East and Europe.
This sauce is entirely Vegan and can be customized easily at home!
Vegan:
just add tofu, your favourite vegetables or sautéed greens while heating up the sauce
Vegetarian:
add grilled paneer or Haloumi cheese and peas while heating sauce
Seafood:
Warm the sauce
Sauté shrimp or sear your favourite fish,
Add sauce, cover and simmer for a few minutes
Poached Egg:
heat sauce and poach eggs in sauce
cover and simmer for a nice egg curry
Heating Tip: Add a little bit of water to reach desired consistency.
