Eat the whole plant!!
Description: This plant is not very large. They can grow up to 16 inches, but I've only seen the plant at 6 inches. This plant might be growing in your lawn. The leaves are slender and lanceolate only an inch or two long. The flowers are about an inch wide. The flowers are typically white, pale pink, with purple/pink striations. There are 5 petals and 5 tiny golden stamens. Stems are weak and green. There are small underground corms/tubers that are very tasty.
Edible Parts: The leaves, stems, flowers, and tubers are edible. The tubers are similar but better tasting than potatoes.
Notes: Look for flowers from March through May. They are all over my and my neighbor's yard. I've eaten all of the plant above ground as a fresh snack, so far. It's very good! The best part (from what I've read) is 2-3 inches under the plant as a corm/tuber.
