Organics surprisingly have the capability to form ferroelectric devices, and this is all thanks to the hydrogen bonds organics may form with each other. If we look at the animation, we can see a chain of molecules held together by intermolecular hydrogen bonds. These molecules are polar, so that when they link up, there is a net polarization pointing downward. When an electric field is applied to this chain, three things happen:

The hydrogen responsible for binding moves from its initial donor site to the adjacent acceptor site. It is moved along the path of its bond.

This hydrogen position is coupled to the location of the double bond highlighted in green. When the hydrogen moves, the double bond position moves with it.

Since we have now changed the position of a double bond, that means we have changed the electron distribution of the each molecule in the chain, which mean that the dipole of each molecule has been inverted, so that the polarization of the chain switches.

This method of obtaining ferroelectric properties comes with a unique consequence. Unlike traditional ferroelectrics, organics ferroelectric properties have little to do with the bulk structure of the material, but is intrinsic to the tiny molecule to molecule interactions, and the bonds they form. So if one could fabricate individual chains, or molecule thin sheets, they would in principle have a 1D or 2D ferroelectric device.
