Bun Ca (Rice Noodle with Fresh Fish)
When you talk about Nha Trang’s cuisine, you can not pass on Bun ca. It is one of the signatures of Nha Trang. A bowl of rice noodle with fish, grilled chopped fish, scallion and hot soup cooked with fresh fish, seasoning it with a thick liquid-y spicy fish sauce would make you eat it like there’s no tomorrows
Made with finely ground pork. After grilling on embers, the meat has a nice golden brown color. Ninh Hoa’s grilled spring rolls are served with crispy fried rice paper, raw vegetables and dipping sauce. The dipping sauce is prepared quite sophisticatedly with ingredients such as meat, shrimp,... creating a very beautiful, smooth yellow sauce. Mix it all together and it will create a flavor which makes everybody mouth-watering.
The dish has a rich flavor with a sweet broth stewed from fish bones. The bowl of Banh Canh consists of flour-based rice noodles, fried fish, fish, vegetables, and green onions... Besides the bowl of Banh canh, there is always a small bowl of fish sauce with a little green chili. The dish attracts locals and tourists by its taste, simple yet attractive, rustic but full of the flavor of the coastal area of Nha Trang.
The perfect combination between the aromatic flavor of rice flour, the fat of eggs and the freshness of shrimp, squid, minced meat, ... has made a name for this dish. This Nha Trang’s dish will be more delicious when served with onion fat, shredded sour mango, herbs and dipping sauces such as garlic sauce, shumai or fish sauce.
