I wanted to personally let you know that I will be stepping down from my current position effective Friday, June 20, 2025, due to ongoing childcare challenges. This has been a very difficult decision, as many of you know how much I love my job and the work we do together.
That said, I’m incredibly thankful for the opportunity to continue supporting on Game Days, and I look forward to staying connected in that capacity.

Maria, the current NPO Manager at Delaware North, is a dedicated and hardworking professional with a passion for the hospitality industry. She joined the company in 2018 as the Assistant Clubs Manager and gradually worked her way up the ladder to become the Assistant Suites Manager. Her strong work ethic and exceptional performance led to her being promoted to the NPO Coordinator position, and in October 2021, she was appointed as the NPO Manager.
Maria has always been motivated by the excitement that comes with game day and the satisfaction that comes with organizing a successful event. Her love for her job is reflected in her dedication to her work and her willingness to go the extra mile for her team and NPOs. Highmark Stadium’s "SHOUT!" sauce was created during her pregnancy when her brain was working overtime, becoming a favorite among fans and is a testament to her creativity and ingenuity.
When not at work, Maria enjoys spending time with her three children and husband. She loves being out in nature and engaging in outdoor activities. Maria has always been an active person, and this is evident in her love for sports and adventure. Prior to joining Delaware North, Maria worked at Walt Disney World in Orlando, Florida. This experience helped her develop excellent customer service skills, which she has brought with her to her current role at Delaware North.
Mark grew up in Buffalo, NY and moved to Miami, FL for College where he attended Johnson and Wales University. During his time in Florida, he worked in all aspects of the Food & Beverage Industry including Walt Disney World. Mark moved back to Buffalo in 2018 and started working for Delaware North in 2019 as the Clubs Manager. In 2022, Mark moved into his current role as the Concessions Manager.
In his role, Mark hopes to build standards and practices that simplify the work we do. He hopes to one day work in the Corporate Office to implement changes and improvements across the Company. Outside of work, Mark volunteers on the Board of the Elmwood Village Association to help enhance the neighborhood that he lives in. Fun facts about Mark, “I love Marvel movies and I love talking to anyone about everything happening in the MCU, but NO SPOILERS!!! Lastly my favorite flavor of ice cream is Mint-Ting-A-Ling.”
Stephen M. Forman, Regional Executive Chef, Buffalo Sportservice has been a Delaware North employee for 6 years. Stephen states that he loves the connection with staff and building a team that works together to make each event great! He enjoys the commitment Delaware North makes when it comes to providing opportunities to help team members develop in their role, preparing them to move their career upward. Stephen’s goal is to continue being a part of the Delaware North team members and help with the building of the culinary culture. To provide leadership to other chefs to help them build their culinary teams and establish a culture within the culinary framework that builds pride and passion. He also plans to achieve his ProChef II and ProChef III certifications.
Stephen states, “I am thankful to have maintained my certification as a Certified Executive Chef. I also have taken a great deal of pride devoting time and energy to my community to help others less fortunate and provide inspiration and leadership to the younger generation.” Fun Fact about Stephen: “I love water!! I love to kayak and go to the beaches wherever I can and enjoy the water.”
Zach is currently the Executive Chef for Highmark Stadium and has been with Delaware North for 6 years. Zach states that the best part about working for Delaware North is the many opportunities that have come with the job over the years; getting to travel and meet other chefs and see other units. Zach’s goals are to become a regional chef for Delaware North and to continue to work his way up within the company until he reaches the corporate office. Zach states that, “Two of my greatest achievements were becoming an eagle scout and when I passed my certification for the sous chef certification (CSC)”. Fun facts about Zach: his favorite food is tacos and he cooked for Dr. Martin Luther King’s Grandson.
Mike Reilly has been in leadership at Highmark Stadium since March 2022. Mike loves working in an NFL environment and being responsible for the team tasked to bring joy to the tens of thousands that come to see the Buffalo Bills.
Mike comes from New Jersey where he first caught on to hospitality as a teenager grilling or frying fresh seafood in a local restaurant on Long Beach Island. After graduation from St. Bonaventure University with a bachelor's degree in business management and The Culinary Insitute of America with an associate's degree Mike worked in various prominent kitchens in the New York City region. The majority of Mike's 15-year hospitality experience has been as the chef for Michelin starred Nomad Hotel in New York City. Immediately prior to joining the Highmark Stadium team, Mike was the Director of Operations for multiple units under Dante NYC.
Since joining Delaware North Sport Service, Mike has championed a strong culture, motivated others as an unrivaled partner and driven for constant improved hospitality at Highmark Stadium. Outside of Highmark Stadium, Mike has provided consistent off-season support to other Delaware North subsidiaries including the PGA Championship.
Mike is always looking towards the future and loves working in a team environment. Off the professional "Field" Mike with his wife Jackie adore their two young daughters. Additionally, Mike is a diehard St. Bonaventure Basketball fan and lover of all things cooked on a BBQ or Grill.
Scott is an industry veteran with over 25 years of experience in various sectors of hospitality, including hotels, convention centers, restaurants, and sports & entertainment. The most rewarding part of his job is fostering an exciting, positive, and creative team culture at Highmark Stadium.
An Alden, NY native, he moved back to the WNY area in 2018 to join the Delaware North team at Highmark Stadium as the Food & Beverage Director after being away for 20 years. A diehard Bills and Sabres fan, Scott fondly remembers the days of the Bills’ Super Bowl appearances and looks forward to many great seasons to come!
When he is away, Scott keeps busy by studying for his MBA, working in his wood shop, and cheering on his daughters at their soccer and softball games with his wife of 22 years.
Stephanie's history with Delaware North at Highmark Stadium began in 2014 as a NPO volunteer for her daughter's cheer group. In 2019, she accepted a position as a Concession Supervisor and began her career with the company. In 2022, Stephanie accepted the position as NPO Coordinator for Highmark Stadium. Halfway through the 2022 football season, she was again promoted to her current position as the Assistant Concession Manager. Stephanie states that she really loves the atmosphere of the workplace on game days. “I enjoy knowing that we are giving the fans the best experience possible along with helping the NPO groups raise funds for their organizations.”
Stephanie is not only dedicated to her career at Delaware North, she is a wife, mom of 3, stepmom of 4, and has 1 granddaughter. Her future goals are to move up within the company to become a Manager or higher, stating that, “the sky is the limit!” Fun facts about Stephanie, she met her husband while working for Delaware North in 2016. While traveling for a work event in Cleveland, they realized that the stands they volunteered in at the stadium were right next to each other. Stephanie also has a hobby in photography and was a bus driver prior to her career at Delaware North.
Megan began her career with Delaware North as a supervisor in Concessions during the 2015 MLB Spring Training season, and then later in the year transitioned to Highmark Stadium. She has worked for the company in various capacities since. Megan began her current role as IT manager of Highmark Stadium, KeyBank Center, and Blue Cross Arena in August 2021. Megan enjoys that her job consists of something different every single day and that she is surrounded by sports at work. Fun facts about Megan, “I am a big baseball fan and have been to every MLB ballpark. Outside of work, I enjoy hiking with my dog and traveling.”
Steve began his career with Delaware North at Highmark Stadium in 2010 as a cook and worked his way up to his current position as the Commissary Manager in 2021. Prior to DNC, Steve worked as a machinist creating steering linkage and axels at American Axle. Steve states that he loves the challenges of the job; keeping up with the changes to every aspect within the industry. He especially enjoyed the opportunity to execute the many the different events, such as, a dinner at the Chairman’s house and the Corporate Challenge.
Steve’s main goal and aspiration is to become an Assistant General Manager. Steve’s achievements during his career at Delaware North include filling in for the Suites Chef at Key Bank Arena for half a season and later becoming the Clubs Chef at Highmark Stadium for several seasons. Steve states that the achievement he is most proud of is when he ran the Buffalo Bills Training Center for a two seasons. Fun fact about Steve: He is an avid Star Wars fan and collector.
Gabriel Torres began his career at Delaware North in 2022 as a Commissary Supervisor at Highmark Stadium. Previously employed 18 years within manufacturing and warehouse positions. Gabriel has an extensive background with various industrial machines, working with others as well as individually to ensure the job is executed properly.
Since starting with Delaware North @ Highmark this will be Gabriel's 3rd season. In such short amount of time, his leadership skills, hard work, and dedication have allowed him the opportunity to except the Co-Assistant Commissary Manager Position.
Gabriel enjoys the challenge that each event brings. Getting all the locations within Highmark Stadium ready with food and beverage for the fans to have the ultimate experience.
Gabriel is most proud of the experience that came with Highmark Stadium hosting the 2023 Playoff games. Amongst other regular season games, Gabriel has had the pleasure of preparing for concerts, chicken wing festivals, cheer competitions and much more.
When Gabriel is not preparing for an event, he enjoys spending time with his family. His wife of 23 years, his two sons aged 19 & 20, and his 2 dogs. Family dinners are an important part for him.
Gabriel is excited about what the future will bring, the many events and fan experiences, as well as the opportunity to continue growing within the company.
Joe is entering his third season at Highmark Stadium. As he joined the culinary staff in October of 2022, he has recently accepted the Assistant Commissary Manager position in the Spring of 2024. He brings in 25 years of culinary experience, working in both corporate, and small individually owned restaurants. He also brings in a competitive mindset to always bring his best to the table, always willing to learn new things and be as dependable and reliable as possible. He is looking forward to this commissary transition.
Joe is also a dad of 2 boys that look up to him and loves to spend his free time with them. He has the love of sports like football, lacrosse, and hockey. His main goal and aspiration are moving up in the company to becoming a Manager someday. His recent accomplishments are helping make the new menu for the 2023 season, getting the stands ready for success. A fun fact about Joe is that he is a coach for his son's football team, and always making his co-workers laugh.
