I am not normally a very "fancy" person, so a meal that sounds as "high class" as Chicken Filet Mignon would not be my first choice to cook. Typically dishes with fancy names intimidate me in the kitchen, but these were special circumstances. My boyfriend, Wesley, and I were working on a new date idea when we decided to have my sister, Maggie, pick a random recipe, from a random cookbook. Whatever she picked would be the recipe that we would prepare. Looking at the recipe, I was immediately intimidated and worried that it would not turn out well. However, it ended up being much easier to create than I expected. To craft this meal, we had to first cook some Stove Top Stuffing and let it cool. When that was finished, we got out the chicken breasts. Wesley began to cut each piece of chicken while I got ready to stuff the chicken. I placed the stuffing inside each chicken breast and then went to the refrigerator to get out the bacon. We wrapped each piece of chicken with bacon and secured them with toothpicks. Finally we topped each piece with lemon pepper seasoning and seasoned salt. The recipe did not say how much seasoning to use, so I just covered each piece until they looked like they would be full of flavor. We put the chicken into the oven at 400 degrees for one hour. As we waited, the aromas from the oven just kept getting better and better. When we finally got to eat, we discovered that this was going to be our new favorite meal.
