The begins at 5am in the morning for Ma Thuzar. She alone cooks all orders, on order. We don't have any dishes cooked in advance. We cook to your order.
Mohinga (မုန့်ဟင်းခါး) is often considered the national dish of Myanmar, traditionally enjoyed as a hearty breakfast but beloved at any time of day. The age-old way of preparing Mohinga reflects a deep connection to local ingredients and time-honored techniques passed down through generations.
In its classic rural form, the broth is simmered slowly using ငါးခူ (nga khu)—a freshwater catfish prized for its strong flavor and rich, gelatinous texture. The fish is gently boiled and deboned, then mashed and added back to the soup to thicken and enrich the broth.
The base is made with hand-pounded lemongrass, banana stem, garlic, onions, ginger, and turmeric, fried in oil to create a fragrant paste. Roasted rice powder is added to the broth to give it body, while fish sauce and fermented products lend depth and umami.
The dish is served over rice vermicelli noodles, topped with crisp fritters, boiled egg, coriander, lime, and chili flakes. This traditional preparation of Mohinga—with nga khu and rustic methods—delivers a bold, earthy flavor that remains a cornerstone of Burmese culinary identity.
This Burmese cuisine, is known for its balance of salty, sour, and umami flavors, with Seabass fish and drumsticks (the pods of the moringa tree). This is a fish and drumstick curry that reflects the simplicity and depth of Burmese home cooking.
In this dish, fresh fish is simmered with onions, garlic, turmeric, creating a rich, slightly oily base. Drumsticks are peeled and cut into lengths, then added to the curry to absorb the flavors. The pods soften during cooking but retain a fibrous texture, offering a pleasant contrast to the tender fish.
The curry is finished with fish sauce and a touch of lime juice for brightness. Have it with steamed rice and may be accompanied by fresh herbs or a side of ngapi ye (fermented fish sauce dip). This dish exemplifies the resourceful, earthy, and nourishing spirit of Burmese village cooking.

We take our dishes to the next level. This raw beef tenderloin salad is a bold fusion of freshness and fire. Roselle is a favourite leaf of the Burmese. Its natural sour flavour complements the oily foods we consume.
Roselle, known locally in Myanmar as chin baung ywet, is a beloved leafy green in Burmese cuisine. The leaves, harvested from the young shoots of the roselle plant (Hibiscus sabdariffa), have a distinctively tangy, slightly astringent flavor that plays a key role in balancing the richness of traditional Burmese dishes. This natural sourness is especially appreciated when paired with oily or meat-heavy foods, as it cuts through the fat and enhances overall flavor harmony. Commonly used in stews, soups, and stir-fries, roselle leaves are also featured in the iconic Burmese dish chin baung kyaw, a tangy roselle leaf curry often cooked with dried shrimp, garlic, and chilies. Beyond its culinary uses, roselle is valued for its health benefits, including digestive aid and high vitamin C content, making it both a flavorful and functional staple in Burmese home cooking.
The Burmese traditionally stew the Hilsa fish this way. Bangus makes a good substitute since Hilsa is not available in the Philippines.

This traditional preparation involves slow-cooking the fish with ingredients like soy sauce, vinegar, tomatoes, and lemongrass, resulting in a flavorful stew where the bones become tender and edible.
The cooking process typically includes marinating the hilsa with turmeric and salt, followed by simmering it with aromatics such as lemongrass, ginger, and chilies. Nga thalaut paung stands out for its unique approach to preparing hilsa, transforming a bony fish into a delicacy where the entire piece is savored, reflecting the resourcefulness and rich flavors characteristic of Burmese cooking.
Try our bamboo shoot salad. It will tingle your palate with a refreshing, earthy, and slightly tangy flavor profile. The bamboo shoots themselves are tender, with a mild subtle sweetness. Mixed with ingredients like fresh herbs like coriander, chili, lime juice, fish sauce, the salad is a vibrant balance of spicy, sour, salty, and umami. The herbs add brightness, the lime juice gives it a zesty punch, and the chili provides heat, making the overall taste both bold and refreshing, with a unique crunch that sets it apart from other salads.
An all time favourite Burmese snack Si Htamin and Ngar Yant Chauk Hpok. Si Htamin is fried malagkit in aromatic oil, served with dried snakehead fish that is roasted.

We found an authentic Chaoshan beef hotpot restaurant. The restaurant serves only beef and no other meat, prepared before you in a glass enclosed kitchen. Only Chinese clientele here.

Finally after two years in Metro Manila, I managed to get some snakehead fish, Channa striata from Pangasinan Province. Watch out for this post. We will try and import the snakehead fish from Pangasinan and make available to you.

Ma Thuzar Myanmar Food took a break from our routine serving authentic Anyar Region Burmese food, making a holiday trip to 100 Islands, Alaminos, Pangasinan.
We tuly enjoyed the beach resort at Atanacia Beach Park, a peaceful secluded private cove.
We cook prawn curry to your your taste bud's desires. Do you like it sipyan (cooked to a dryer gravy to bring out the spiced oils) or with lots of gravy or really chili hot or any combination? Tell us how you like your curry when you order and we will cook it up for you as you like it.
