Peasant food is the beautiful cooking of Italy. It is rich in tradition and flavor. It is fresh, yet simply elegant. Just as the regions of Italy have various dialects, so is the diversity of Italian cuisine.
The most basic dishes vary from the regions of Italy, as well as from family to family, and their unique takes on these include local ingredients and traditions. This style of cooking also involves using leftovers to make the most of what is available in the kitchen. However, sadly some of these recipes have been literally and figuratively lost in translation throughout the generations.
But mostly, I am proud to share the joy and delight of the cuisine that speaks to my heritage by bringing back the Old World style of Italian food. My friends, this is Italian Peasant Cooking.
