I like to make them and freeze them for when I need a quick meal...
Pasta Frittata
2 c cooked pasta (any pasta dish will do)
3 eggs
1/2 c grated Parmesan
1/2 c grated mozzarella or cheddar cheese
salt and pepper for seasoning
chopped fresh parsley for garnish
Whisk eggs, parmesan and seasoning together. Mix in pasta and cheese.
Heat 2 T olive oil in a fry pan. Cook pasta until golden and flip over onto a plate and cook other side. Garnish with chopped parsley.
For a Baked Pasta Pie:
Pour pasta mixture into a prepared pie plate and bake at 350 for 20 - 30 minutes.
