DANGEROUSLY addictive. (Keep the butter close by.)
Slice it, dice it, pop it in a pan. Dash of brown sugar and SHIBITTY-BAM!
Peel carrots or use baby carrots.
Slice into coins or your preferred size.
Add to pan with a small amount of water to keep from sticking to the bottom. Set to medium heat.
Add spices! I use 1-2 Tbsp of brown sugar, or even molasses, and a little powdered ginger. But there are so many options you could try, have fun!
Cover and cook until carrots are softened. Serve hot.

This is how I do it.
Decide how many eggs you want and gently place them into a pan with enough room for them to all sit evenly on the bottom, but it's ok if they are stacked a little. Just be sure the pan is deep enough for adding water so that it covers the eggs a bit.
Cook at medium-high. Once they start boiling, set your timer for 10 minutes. (Be sure it's a rolling boil, not a simmer.) *Letting the cold eggs and cool water warm up together seems to help with less splitting and cracking once the boiling starts.
When time's up, remove from heat and carefully drain as much as you can into the sink, leaving the eggs in the pan. *This is when I shake the pan a little to get the shells to crack a bit so it's easier to peel them. Replace water in the pot with COLD water. Those eggs are hot inside, so you can fill with cold water and let them sit, or you can let a slow stream of cold water keep the water cooling those eggs.
Now it's up to you! Want 'em hot? Drain the cool water once you feel like you can handle the eggs. Want em cool? Let them sit longer, BUT not too long. If they sit too long, you risk the shells sticking to the eggs, and that's a big pain. Try the cold water bath 10-15 minutes.
