Processing Instruction Sheets should be submitted no later than One week after the date of animal slaughter for prompt service; all customers are encouraged to review the instruction selections ahead of the scheduled slaughter date and submit their instructions via the web form or over the phone.
**All Beef Quarters are processed as "Standard Cut" orders to ensure both parties receiving a quarter get an equal share. Any customers who have not submitted a cut sheet on time will receive their order processed as a "Standard Cut."**
Standard Cut Orders will receive the following items off of the cut sheet: flank steak, skirt steak, sirloin tip steak, porterhouse/t-bone steaks, top sirloin steak, top round steak, cube steak, stew meat, soup bones, arm roast, short ribs, chuck roast, half brisket, "Prime" rib steak, and ground beef. Package sizes will include 1# bags of ground beef, 2 steaks per package, and 2-3 Pound Roasts.
