Chai has a next level fan base in India managed by small to big enterprises from rural to urban. Be it any season, any time, anywhere or any situation, an Indian is always going to think of Chai atleast once during a day. Infact for many Indians, Chai is not just a drink, it’s an emotion. Just imagine… you’re surrounded by the woods, there's a stream passing nearby which can be heard, there's a local tapri making sizzling adhrak wali chai and serves you in a kaach ka glass. Oh I forgot to mention, it's raining too. Just you and your chai, that's definitely going to sound romantic. I have seen people sipping chai during his summers also as they find chai as a source of getting fresh. But it's better to not imagine this one ;)
In many places across the city of Mumbai, I have noticed the existence of Nagori Chaiwalas servicing exceptional Chai that tastes stupendous compared to the regular ones. Nagori Chai is also a specialty as it is purely made of cow’s milk. It is technically originated from the Nagours of Rajasthan who have smart efforts in spreading the culture of pure cow milk chai across the country. My first encounter with Nagori Chai was when I saw a big hoarding outside a shop in Wadala which sounded fascinating. I didn’t though, but the name stuck in my mind. Coincidentally the very next day, I came across a chai shop in Sion where I the word ‘Nagori’ was highlighted. Out of curiosity, I ordered a Nagori cutting and enjoyed that moment. The Chai looked a bit dark, but wasn’t strong but had a strong milky tastChaie. I felt ke hlike having it more but I didn’t. So, basically Nagori Chai is a delicacy offered by the Rajput Muslims and Hindus of Rajasthan who are presently spread across the country highly involved in dairy business. In search of opportunities and growth, the community constantly focused on making the best use of cow milk. Precisely, making chai out of a high fat milk and that is what is Nagori Chai. I would say this is stands out to be a must try as it is more tastier than the regular chai. An interesting point to note is that most of the Chaiwalas don't even use any special masala for making Nagori Chai. That's the power of pure cow milk.
