Crystallized honey is not honey "gone bad." The honey has simply changed its form from a liquid to a solid. Our honey is raw, meaning that it is not heated and forced into a dense filter to remove all particles, such as bits of pollen. Extreme heat will degrade or destroy the vitamins and minerals in raw honey. Let the honey container rest in a cup or bowl of warm water (lid tightly on!) to return honey to its liquid state.
Some people enjoy the crunchy bits in crystallized honey. Others prefer their honey to be fully liquid. It's a matter of personal taste.
