Here are some things I'd like to write (very broad),

Mermaids (mermaid with octopus tentacles instead of a tail) (main character is a Mer sign language interpreter, as there must be a specialization due to the "dialect" of webbed fingers) (Mer living deeper in the ocean must be larger due to the pressure; shallow Mer have darker skin due to sunlight exposure)
Circus setting (old-timey, 1920s, supernatural in some way) (evil magician) (exploited crowd) (popcorn)
Flappers in 1920s setting (prohibition)
Shapeshifter contracting rabies (He's totally normal when he's a human but as an animal he's insane. He's put into a situation where he must shift into his animal form to save his life - someone's holding him at gunpoint?)
Murder mystery with a supernatural cult (bulletin boards w/ photos and string, small town diner) (the pagan deity the cult worships is the guy helping her with the mystery the whole time because he's bored. He's actually a chill dude)
A vague apocalypse difficult for the main character to understand for the first few chapters (lots of vague warning signs "BEWARE OF WHATS AHEAD"; "IT COMES AT NOON", people painting "RUN" on their roof)

An apocalypse with a main character who cannot access their medication and enters psychosis. The entire book builds to an understanding of what the apocalypse is and what will end it (with an unreliable narrator). The end of the book - the main character steps into the danger (to end the apocalypse). The reader doesn't know whether the narrator was psychotic and died for nothing or whether it was real and they are the savior
