Proteomics & allergens

These are proteins that can cause adverse reactions in predisposed individuals. To protect consumers, we research well-known allergens that may be "hidden" in commonly consumed foods. We also identify and characterize potentially allergenic proteins in new food matrices, such as microalgae and insects.
