ABOUT MY PROJECT

In November of 2018, I was visiting my great uncle in his new nursing home. The food that was served did not promote enough whole foods for our elders. I decided that I wanted to change this and provide healthier, plant-based options in as many senior living homes as possible.


My target is for all of the residents at Carson Valley Senior Living to choose the new plant-based options I plan to provide on the menu AT LEAST once a day. Multiple studies prove that those on a plant-based diet have a higher chance of reducing and preventing extreme medical problems. A research project done by dieticians and scientists in Slovakia and Washington D.C proved that following a plant-based diet tends to reduce the abundance of pathogenic gut bacteria, therefore causing a greater abundance of protective species. Articles published in the Journal of the American Medical Association show that a plant-based diet is 50x more likely to lower blood pressure than an animal-based diet. The American Institute for Cancer Research recommends following a plant-based diet to help lower overall cancer incidences. Research presented during the American Heart Association’s scientific sessions showed that plant-based diets decreased the risk of heart failure by 42 percent among people with no history of heart disease. Furthermore, Steven Lederman, MD, boasts that a plant-based diet is the only diet proven to prevent and reverse heart disease.


I plan to help the residents choose healthier options that reduce health and wellness issues. Even if they are only cutting one meal at a time, that’s an amazing start and I am ready to take on the task of doing so.
