I just got an email from a customer that wants to order a groom cake for his wedding and wanted the inside of the cake to look like the Jamaican flag. I am attaching the picture he sent to show you want he means. I have no idea how to go about doing this. I'm currently working on this cake for a wedding in June. I too contacted Sage Delights and she would not give me an answer. I have figured it out from asking to another decorator that is in Florida (I am in Canada) the trick is several cone shaped circles carved into both layers of the cake so that you get half a triangle. Line the cone circles with cream cheese and then add the green cake.

Make two white cake (round or square). I use the WASC cake. Color one green and the other black. Cut out a wide cone shape from the top and bottom of each. Ensure the top of the cone is as wide as the top of the cake and the depth should be half-way down the height of the cake so the point of both cones meet in the center of the cake. Now both cakes should look like they have two giant cone shape holes in them, from the top and the bottom. Now, generously line the inside of the cone opening in the black cake with a nice bright lemon yellow color buttercream. Place one piece of the green cone shape cake into the black cake and press gently so it flushes with the top of the black cake. Turn the cake over and do the same on the other opening. Now buttercream and fondant your fully constructed cake. When you cut a slice it should look just like the Jamaican flag.
