Sweet Potato Shepherd's Pie
Meatless Shepherd's Pie
Ingredients:
2 large eggs
1/2 cup rolled oats
2 cans dark kidney beans (drained)
1 can black beans (drained)
1 cup celery (chopped)
1 cup carrots (chopped)
1 bag frozen peas
1 Tbsp teriyaki marinade
1 Tbsp Worcestershire sauce
2 Tbsp almond milk
1 Tbsp garlic
Preparation:
Preheat oven to 425F
Peel and chop sweet potatoes and boil in a large pot until tender.
prepare celery and carrots as described in "ingredients"
Add to a preheated and oiled saucepan. Add garlic and cook celery and carrots until tender.
In a blender, process rolled oats until fine
In the same blender, process kidney beans and black beans until completely pulverized.
in a large mixing bowl; add beans, eggs, 1/4 cup rolled oats, teriyaki sauce and Worcestershire sauce.
Add cooked vegetables and frozen peas to bean mix.
Mash cook sweet potatoes and add remaining oats and almond milk. Mix completely.
Place bean mix in an oiled 9"x11" pan. Place sweet potatoes in an even layer over bean mix.
Bake in oven for around 20 minutes.
Keep it Under500!
One 4.5" x 4" piece is 360 calories!!
