Preparation:
- Take 2 bags of cauliflower and cook in microwave for about 8 minutes; until done. Remove and place in refrigerator to chill.
- Preheat oven to 425F.
- Prep pizza toppings of choice.
- Overlap cheese cloth and make a square. Place chilled cauliflower in center. Over a bowl, wring out as much moisture from cooked cauliflower (until it barely drips when squeezed).
- Place dried cauliflower in a large mixing bowl. Add parmesan cheese, beaten egg, spices. Hand mix until even.
- Pat out on a pizza pan lined with oiled parchment paper.
- Place in oven for about 10 minutes. Remove and flip over. Cook for about 10 more minutes or until golden brown.
- Add pizza sauce, cheese, toppings of your choice and cook until cheese is melted. (if using meats, precook your meat until done)
Tip #1: Be sure to chill cauliflower, wringing out moisture could get hot.
Tip #2: When using your pizza sauce, use little to avoid getting soggy crust; I used a cup.
Keep it Under500!
Toppings: 1 1/4 cup mozerella cheese; 2 roma tomatoes; 1 cup marinara sauce (that's it!) This will make a whole 12in. pizza for 874 calories!
