Preparation:
- Preheat oven to 425F.
- Steam cauliflower in microwave. Place on a paper towel and allow to cool.
- Process oats into a fine powder in a blender/food processor. Set aside.
- Process carrots into minced pieces in a blender/food processor. Place in microwavable bowl and microwave for 7 minutes.
- Process dates into one solid mass in blender/food processor. Set aside in a small bowl.
- Add almond milk to dates and mix thoroughly.
- In a large mixing bowl, add bananas and mash with a fork.
- Add eggs to bananas and mix completely.
- Add cauliflower, carrots, blueberries, vanilla extract, and almond butter to large mixing bowl and stir until even mixed.
- Place mix in a 9"x 9" oiled pan and place in oven. Cook for around 15-20 minutes or until cooked through.
