This webinar will serve as an introduction to using tools and techniques of quantitative microbial risk assessment to manage food safety risks. The audience will learn about three components of risk analysis. The concept of microbial food safety risk assessment will be presented with the aid of two case studies. One case study will involve the estimation of risk associated with peanut butter candy made with an ingredient potentially contaminated with Salmonella. The second case study will describe a simulation conducted to model pathogenic E. coli contamination in leafy greens. The webinar will cover the use of microbial sampling results, use of surrogate data from the published literature, dose response modeling, importance of variability and uncertainty, microbial growth modeling, as well as other related topics.
