Ingredients
1 TBS or more Organic, Extra Virgin Olive Oil
1 Medium Eggplant, sliced
1 Organic, Large Brown Egg
1/8 cup Bob's Red Mill, Organic Golden Corn Flour, Masa Harina
1/8 cup Organic Gluten-Free All-Purpose Baking Mix
¼ Tsp Organic Black Pepper, Ground
¼ Tsp Organic Garlic Himalayan Salt
¼ Tsp Parsley, Dried
¼ Tsp Basil, Dried
¼ Tsp Oregano, Dried
Directions
1. Mix masa, baking mix, herbs, salt, and pepper together on a small plate.
2. Whisk egg in a small bowl.
3. Slice eggplant or vegetable of choice into half-inch or thinner slices.
4. Heat olive oil in a pan or deep fryer to 350 degrees or less.
5. Dip vegetable slices in egg wash one at a time, then dredge in flour mixture ensuring it is coated evenly.
6. Place battered slices in a deep fryer or a pan with heated oil.
7. Allow vegetables to fry for 5 to 10 minutes or until golden brown. If you are pan-frying flip to ensure both sides are browned evenly.
8. Remove from oil and allow to cool on a paper towel to absorb excess oil.
9. Serve with dip or use to prepare a variety of Italian dishes.
