Ingredients
1 Tbsp Organic, Extra Virgin Olive Oil
1 Medium Onion, White or Yellow, chopped
5 Cloves Garlic, diced
6 cups Tomato Raw, Cherry, Grape, Roma, or any variety, chopped
5 Organic, Kalamata Olives, sliced
5 Organic, Green Olives, sliced
One package or several sprigs Organic Basil, fresh or dried
1/8 cup Organic Parsley, dried or fresh
1/8 cup Organic Oregano, dried or fresh
1 TBS Garlic Chives, fresh, chopped
3 Sprigs Organic Thyme, dried or fresh
5 TBS Organic Tomato Paste
½ Cup Filtered water (more or less depending on thickness preference)
2 Tsp Organic Granulated Cane Sugar
Dash or to taste preference Himalayan Pink or Sea Salt
Dash or to taste preference Organic Black Pepper, Ground
Directions
1. Dice or chop onion, garlic, tomatoes, olives, and prepare any fresh herbs.
2. Heat 1 TBS olive oil in a saucepan on the stovetop using medium to high heat.
3. Add onion and garlic to the pan and sauté until lightly caramelized.
4. Add fresh diced tomatoes and let them cook down for 5-10 minutes until liquid is rendered into the pan.
5. Add fresh herbs, olives, and allow to cook for 3-5 minutes.
6. Add tomato paste mixing to incorporate into the sauce and allow to cook for about 5 more minutes. If the sauce gets too thick adding some filtered water may be necessary, about ½ cup water should be enough to produce a good sauce consistency.
7. Add sugar, salt, and pepper to taste preference.
8. Remove from heat and serve or use to prepare another recipe after cooled slightly.
