ImagEAT — First Workshop on
Imaging, AI, VR and AR in Food Research to Enhancing Safety, Quality and Consumer Insights
September 16, 2025
ImagEAT is the first international workshop exploring how emerging technologies—imaging, AI, virtual and augmented reality (VR/AR), and neuroscience—are transforming food research.
From hyperspectral imaging to brain activity analysis, ImagEAT covers advanced tools for improving food safety, quality, traceability, and understanding consumer behavior.
The event brings together researchers, industry professionals, and policymakers to discuss practical applications ranging from contaminant detection and nutritional personalization, to interactive food education through AR.
Organized with the support of METROFOOD-IT, ImagEAT offers a unique space for scientific exchange at the intersection of technology, food, and human perception.
Call for papers
The ImagEAT Workshop invites original contributions that explore the intersection of imaging, artificial intelligence (AI), augmented reality (AR), and neuroscience in food research and innovation.
As the agri-food sector undergoes a technological transformation, this workshop provides a unique platform to present cutting-edge work on:
Advanced imaging techniques for food quality, safety, and authenticity
AI-driven analysis and decision-making in nutrition and food processing
AR applications for consumer engagement, education, and traceability
Cognitive and behavioral studies using brain imaging and biosignals
We welcome submissions addressing both theoretical and applied aspects of these topics, with a focus on explainable models, multi-modal approaches, and real-world implementations.
Accepted papers will be published in the Springer Lecture Notes in Computer Science (LNCS) series and presented in oral sessions during the workshop.
Call for demos
In addition to regular paper presentations, the ImagEAT Workshop will feature a Demo Competition to showcase innovative applications of imaging, AI, and AR/VR technologies in the food research and nutrition domains.
Authors of accepted papers who wish to participate in the competition are invited to submit a short abstract describing the efficiency, originality, and potential impact of their demo.
During the workshop, selected participants will present their demos through interactive sessions, offering attendees the opportunity to experience cutting-edge solutions firsthand.
The best demo will be recognized with the ImagEAT Innovation Award — a commemorative plaque awarded by a jury of experts and announced during the closing session of the workshop.
This competition aims to foster creativity and collaboration, while highlighting real-world applications of advanced technologies in agri-food science and consumer engagement.
