Why Sourdough?
Many people think that Sourdough is a style of bread like ciabatta, wholewheat etc. Sourdough is not a style but a fermentation technique (the natural and ancient one). The modern bread making process uses a species of yeast that would not naturally ferment wheat (it's actually a beer yeast) and herein lies the problem. In addition to this rapid and nutritionally unhelpful fermentation, the industrial bread process has other ingredients that are the reason bread has a bad rap.
