Few raw, tiger prawns / prawns
150g sustainably sourced monkfish or any kind of fish filet
100g Scallop
100g baby squid, cut into thick rings
100g mussels
90mL olive oil
3 garlic cloves, peeled and finely chopped
1 onion, peeled and finely diced
200g chopped tomatoes
1 big pinch saffron
1 tsp smoked paprika
50mL dry white wine
1 handful chopped flat-leaf parsley
½ lemon, cut into wedges
1 pc bay leave
500mL fish stock or chicken stock
250g plain rice
