Heat neutral oil in pot. Toss in garlic 'til fragrant
Add rice & water to pot filling 2/3 of pot, ensuring water covers the amount of cooked rice added. Aim for a 2:3 rice to water ratio
simmer for 30 minutes
add ginger and seasoning. I'd start with the umami (2 tbspn of Msg or bouillon) then taste. add salt as needed. additional spice can be added with ground white pepper
now would be the moment to cook your seafood, shabu beef, or sans-protein with the jook
taste and simmer 'til thickened to preference
