1 onion ๐ง
2-4 Garlic cloves ๐ง
1-3 carrots ๐ฅ
Pepper of choice ๐ซ
Potato ๐ฅ
Cabbage ๐ฅฌ
peas ๐ซ
legumes or beans ๐ซ

stove on medium-high, Heat pan with neutral oil
Add onions. Sweat onions (cook 'til they glisten!) then add remainder aromatics carrots, peppers, etc
Cook aromatics til golden brown
Add veggies to simmer with the aromatics for a minute. then add water or broth 'til it covers veggies in pan
allow everything to simmer 'til starchiest veggie is soft or to preferred texture
add protein dependent on how long it takes to cook/tenderize
Once veggies are softened, add curry mix. we use half a box of mix per 4 servings
If eating with rice cakes, simmer rice cakes with the curry for a minute
