The Japanese soul food soba noodles
The Japanese soul food soba noodles
Welcome to our website.
I am the owner of a buckwheat noodle restaurant in Shigaraki Town, Koka City, Shiga Prefecture.
I created this page to introduce Japanese buckwheat noodles to people from various countries and regions.
Soba is a very famous food in Japan. Not only is its flavor and texture interesting, but also its production process.
Soba noodles are made from buckwheat flour, and the process is similar to making bread dough.
Soba is a wonder food that can be prepared in a variety of ways, such as buckwheat noodle soup, hot or cold.
It is said that soba noodles first appeared in Japan around the Edo period (1603-1867), although there are various theories. Before that time, there was no custom of eating soba as noodles, as is often imagined in Japanese cuisine today.
However, dishes made from buckwheat flour such as "soba-gaki" and "soba-mochi" did exist in Japan.
Buckwheat was also used as a foodstuff to save people from starvation in the old days when food harvests were unstable, as buckwheat seeds were resistant to sunshine and cold and could be grown in any area, even during bad harvests.
We are not able to express it well, but we hope that you will take some interest in soba and try our soba.
