Macaroni and Cheese With Broccoli

SERVES: 8 (approx. 1¼ cups each)Total Time: 37 min
*USE CAULIFLOWER AS A SUB FOR BROCCOLI TO HIDE THE VEGGIE!

INGREDIENTS

1 Tbsp. + 1 tsp. unsalted organic grass-fed butter 2 cloves garlic, finely chopped 2 Tbsp. whole wheat flour ½ tsp. ground paprika 1½ cups unsweetened almond milk 1¼ cups freshly grated extra-sharp cheddar cheese 4 cups cooked whole wheat elbow macaroni 3 cups chopped cooked chicken breast, boneless, skinless 4 cups chopped steamed broccoli florets ½ tsp. sea salt (or Himalayan salt) ½ tsp. ground black pepper

DIRECTIONS:

1. Melt butter in large saucepan over medium heat. 2. Add garlic; cook, stirring frequently, for 1 minute. 3. Add flour and paprika; cook, whisking constantly, for 1 minute, or until brown. (Don’t let it burn.) 4. Slowly whisk in almond milk; cook, whisking constantly, for 1 to 2 minutes, or until mixture thickens and there are no lumps. 5. Reduce heat to low. Add cheese; cook, whisking constantly, for 2 to 3 minutes, or until melted. 6. Add macaroni, chicken, broccoli, salt, and pepper; cook, stirring constantly, for 1 minute, or until heated through. 7. Serve immediately.

Broccoli Tots

SERVES: 8, 2 tots eachTotal Time: 37 mins

INGREDIENTS

Nonstick cooking sprayHot water12 oz. broccoli florets (about 5 cups)1 large egg, lightly beaten⅔ cup whole-grain Panko bread crumbs2 cloves garlic, finely chopped¼ cup finely chopped green onions⅔ cup shredded cheddar cheese¼ tsp. sea salt (or Himalayan salt)¼ tsp. ground black pepper2 tsp. hot pepper sauce (optional)

DIRECTIONS

1.Lightly coat a large baking sheet with spray. Set aside.2. Boil water in steamer or large saucepan over high heat. Reduce heat to medium-high. Place broccoli in steamer basket; cook for 3 to 4 minutes, or until tender-crisp and bright green. Drain and chop.3. Preheat oven to 400º F.4. Combine broccoli, egg, bread crumbs, garlic, green onions, cheese, salt, pepper, and hot sauce (if desired) in a large bowl; mix well.5. Refrigerate, covered, for 15 to 30 minutes.6.To make each tot, shape approximately 2 to 3 Tbsp. broccoli mixture into tot shape. Place on prepared baking sheet.7.Bake for 8 to 10 minutes. Turn over; bake for an additional 7 to 8 minutes, or until golden brown.

Chicken Fingers w/Honey Mustard Dipping Sauce

SERVES:Total Time:

INGREDIENTS

2 Tbsp. raw honey2 Tbsp. Dijon mustard2 tsp. rice wine vinegarNonstick cooking spray or olive oil cooking spray2 large eggs2 Tbsp. water1 lb. raw chicken breast tenders, skinless1 cup whole wheat Panko bread crumbs (Japanese-style bread crumbs)1/2 cup finely chopped sliced raw almonds1 dash sea salt or Himalayan salt1 dash ground black pepper

DIRECTIONS:

1.Combine honey, mustard, and vinegar in a small bowl; mix well. Chill.2. Preheat oven to 425° F.Line baking sheet with foil; lightly coat with spray.3. Combine eggs and water in a medium shallow bowl; whisk to blend.4. Soak chicken in egg mixture for 30 minutes, turning once; set aside.5. Combine bread crumbs, almonds, salt, and pepper in a large resealable plastic bag; shake to combine.6. Working with a few pieces at a time, lift chicken from egg mixture, letting excess drip back into bowl, and drop into bag containing bread crumb mixture. Seal bag and shake to coat; repeat with remaining chicken.7. Place chicken on prepared baking sheet. 8. Bake for 18 to 20 minutes, turning after 10 minutes, until no longer pink in the middle and golden brown.9. Serve with honey mustard dipping sauce.
