Our group is dedicated to developing next-generation food materials and processing technologies with the vision of contributing to a sustainable future food system.
At FMPL, we explore the properties and structure-forming mechanisms of food materials, and turn this understanding into practical processing technologies for developing real food products. Our research focuses on key areas of the future food industry, including plant-based meat alternatives, hybrid meat alternatives, microbial-derived alternative fats, and eco-friendly (edible & biodegradable) food packaging materials.
Students, researchers, and industry partners who wish to join FMPL on its journey toward building a sustainable future food system are always welcome to contact us.
2026-05-25: The FMPL website was launched
2026-04-08: Our group was selected for a new research project under the Ministry of Oceans and Fisheries' ≪Marine and Fisheries Convergence Professional Training Program*≫ with a total project period of 5 years (* 해양수산부 해양수산 융합형 전문인력양성 사업)
2026-03-05: Junghee Jung and Sojeong Park joined our group as master's students
2026-03-01: Dr. Jung-Soo Lee was appointed as an Assistant Professor in the Department of Food Science and Nutrition at Pusan National University and established FMPL
2026-02-27: Dr. Jung-Soo Lee was selected for a new research project under the National Research Foundation of Korea's ≪Sejong Science Fellowship-Domestic Track*≫ with a total project period of 5 years (* 한국연구재단 세종과학펠로우십 국내트랙 사업)
