FMPL은 지속가능한 미래 식품 시스템 구축에 기여하는 것을 목표로, 차세대 식품소재와 가공기술을 개발하고 있습니다.
FMPL에서는 식품소재의 특성과 구조가 형성되는 원리를 이해하고, 이를 실제 식품 개발에 활용할 수 있는 가공기술로 발전시키는 연구를 수행합니다. 주요 연구 분야로는 식물성 대체육, 하이브리드 대체육, 미생물 유래 대체지방, 친환경(가식성 및 생분해성) 식품 포장재 등이 있으며, 이외에도 미래 식품산업의 핵심 기술을 폭넓게 다루고 있습니다.

Our group is dedicated to developing next-generation food materials and processing technologies with the vision of contributing to a sustainable future food system.
At FMPL, we explore the properties and structure-forming mechanisms of food materials, and turn this understanding into practical processing technologies for developing real food products. Our research focuses on key areas of the future food industry, including plant-based meat alternatives, hybrid meat alternatives, microbial-derived alternative fats, and eco-friendly (edible & biodegradable) food packaging materials.

2026-08-03: Hyojin Yoo has joined our group as an undergraduate researcher. A warm welcome to Hyojin!
2026-07-23: The FMPL@PNU website was officially launched!
2026-04-08: Our group was selected for a new research project under the Ministry of Oceans and Fisheries' ≪Marine and Fisheries Convergence Professional Training Program*≫ with a total project period of 5 years (* 해양수산부 해양수산 융합형 전문인력양성 사업).
2026-03-05: Junghee Jung & Sojeong Park joined our group as master's students.
2026-03-01: Dr. Jung-Soo Lee was appointed as an Assistant Professor in the Department of Food Science and Nutrition at Pusan National University and established FMPL.
2026-02-27: Dr. Jung-Soo Lee was selected for a new research project under the National Research Foundation of Korea's ≪Sejong Science Fellowship-Domestic Track*≫ with a total project period of 5 years (* 한국연구재단 세종과학펠로우십 국내트랙 사업).
