Our group is dedicated to developing next-generation food materials and processing technologies with the vision of contributing to a sustainable future food system.
At FMPL, we explore the properties and structure-forming mechanisms of food materials, and turn this understanding into practical processing technologies for developing real food products. Our research focuses on key areas of the future food industry, including plant-based meat alternatives, hybrid meat alternatives, microbial-derived alternative fats, and eco-friendly (edible & biodegradable) food packaging materials.

2026-04-08: Our group was selected for a new research project under the Ministry of Oceans and Fisheries' ≪Marine and Fisheries Convergence Professional Training Program*≫ with a total project period of 5 years (* 해양수산부 해양수산 융합형 전문인력양성 사업).
2026-03-05: Junghee Jung & Sojeong Park joined our group as master's students.
2026-03-01: Dr. Jung-Soo Lee was appointed as an Assistant Professor in the Department of Food Science and Nutrition at Pusan National University and established FMPL.
2026-02-27: Dr. Jung-Soo Lee was selected for a new research project under the National Research Foundation of Korea's ≪Sejong Science Fellowship-Domestic Track*≫ with a total project period of 5 years (* 한국연구재단 세종과학펠로우십 국내트랙 사업).
