Turon, rolled in a spring roll wrapper, fried till the wrapper is crisp and coated with caramelized brown sugar. Turon can also include other fillings. Most common is jackfruit (langka), but there are also recipes with sweet potato (kamote), mango (mangga), cheddar cheese and coconut (niyog).
Ingredients:
6 pieces bananas saba or plantains, cut in half (lengthwise)
1 cup jackfruit ripe, sliced.
1 1/2 cup sugar.
12 pieces lumpia wrapper.
2 cups cooking oil.
Method:
Step 1
Peel bananas and cut lengthwise into two halves. Roll in sugar.
Step 2
Separate wrappers into individual sheets. On a flat working surface, lay wrapper like a diamond. Arrange 1 banana slice in the middle of diamond and place 2 to 3 jackfruit strips lengthwise on top of banana slice.
Step 3
Fold bottom pointed end of wrapper over filling. Fold side ends of the sheet inward and roll into a log. Wet the pointed edge of the wrapper to completely seal.
Step 4
Roll sealed spring rolls in sugar.
Step 5
Repeat with the remaining bananas.
Step 6
In a skillet over medium heat, heat about 1-inch deep of oil. Add banana spring rolls seam side down and fry, turning once or twice, for about 3 to 5 minutes on each side or until crisp and golden brown.
