About us
The Food Nanotechnology Laboratory is conducting physical and chemical analyses, including microstructural and rheological assessments, to understand the characteristics of food, such as the size and distribution of components. The lab is also engaged in future-oriented research on the development of various food products using digitally-based, multidimensional intelligent additive manufacturing technologies.Β
Specifically, before applying multidimensional intelligent additive manufacturing as a food processing method, the lab analyzes the rheological properties of food inks to understand their behavior in food production. Subsequently, they are working on optimizing food properties by comparing and analyzing the texture and quality of foods manufactured through CAD modeling design and adjustments to the parameters of multidimensional intelligent additive manufacturing technologies. Additionally, the lab conducts research on the dynamic simulation of food in the mouth by investigating the changes in the foodβs structure during consumption to better understand the dynamics that occur in the oral environment.Β
