I am so happy that out of all of the blogs you could have chosen, you chose mine. Thank you for that.
My name is Megan, and I am a 21-year-old super and overly involved college student who is running around all week in small-town Virginia who loves to eat yummy home cooked food and sweet treats that don’t break the bank. My favorite foods are pasta, pot roast, fried chicken, potatoes, and brownies. I usually find myself making pasta once a week, so I am a pro at garlicky and cheesy alfredo. Over the past two years of living in an apartment, I have curated easy meals that can be made by anyone. I grew up with my mom cooking meat and three to four sides, so when I got to college and I figured out how time consuming that was, I wanted to find a solution. Moms make it look so easy and failing at making your favorite is the most disappointing thing, especially when you wait to make dinner until the last minute. I know the struggle of preparing food for one person. I have the hardest time trying to figure it out, like trying to not cook enough pasta for eight people or trying to figure out how many pieces of chicken will suffice me after it cooks and shrinks. That is how the idea for this blog came out. I knew that I was struggling with cooking, so maybe other people in college were struggling as well.
Over the next eight weeks, I hope that I can help you feel more confident in your cooking and baking skills. For me, cooking and baking is a love language, and I am super excited to share this love with you. This also comes from my mom. On every birthday and at every holiday party, my mom has made her famous chocolate cake that is a recipe passed down from my paternal grandmother. Whenever I am sad, she makes the cake, if you are sick, she makes the cake. Even now that I am in college, each November she brings me her chocolate cake to share with my friends. This cake has brought me closer to each of my friends, my family, and even helped me secure my boyfriend. 😆
This blog focuses on easy meals. Whether you are really good at cooking and just want easier meals to make during the week or if you are new to cooking and want to build your skills, this is the place for you. I have scoped Pinterest, Instagram, and am in all of the Facebook groups where moms post their easiest recipes. Here is my Pinterest board I use to guide what I cook throughout the week. I will be sure to share easy recipes that I find that are similar to the ones I will be sharing with you.
We will be working together to not be afraid of cooking and introducing you into tools like the crockpot. Over the next few weeks, we will dive straight into cooking with one pan meals, meal prep, single portion dinners, vegan meals, and yummy, sweet treats!
