There are multiple ways to dispose of compostable items such as food scraps in a sustainable way. You can make your own compost at home or use a local composting service.
If you are making your own compost to use in your own garden, it is important to have a mix of brown and green materials.
Green materials (Food scraps, grass clippings, etc.) contain nitrogen and brown materials (leaves, branches, paper, etc.) contain carbon, essential ingredients in compost. Choose a spot for your compost pile and layer your materials as you collect them. You should have about 60% brown materials and 40% green materials. If you layer brown materials on top of food scraps there should be little to no smell as the brown materials will act as a filter. You may need to add water to your pile, but likely the food waste in the pile will keep it moist enough. You should turn your pile every few weeks. If you are making your own compost at home, it should be ready to use within 2-12 months.

A small bin like this is perfect to keep on your kitchen counter. You can toss in food scraps as you cook. Look for a bin with a filter to reduce odors. Here is a bin from Amazon that comes with a filter:

Another way to reduce odor and make composting easier is to line your kitchen bin with a compostable bag. Once it's full, you can tie the bag and take it outside to a larger bucket. Here are some liners you can buy from Amazon.

I like to keep a large bucket in my garage by the trash cans. I put the filled bags of food scraps in here and drop them off at the city of Dublin site. You can buy buckets on Amazon or at stores like Lowes and Home Depot.
