Dr. Seung-Oh Seo (a.k.a SOS) is an Assistant Professor at the Department of Food Science and Biotechnology at the Seoul National University of Science and Technology. Dr. SOS received a B.S. degree (2009) in Food Science and Biotechnology from Sungkyunkwan University and M.S. degree (2011, advisor: Prof. Jin-Ho Seo) majoring in Food Science and Biotechnology from Seoul National University. He moved to the USA and received a Ph.D. degree (2017, advisor: Prof. Hans P. Blaschek, and co-advisor: Prof. Yong-Su Jin) at the Department of Food Science and Human Nutrition at the University of Illinois at Urbana-Champaign. After completing a post-doctoral training (2017-2019, advisor: Prof. Claudia Schmidt-Dannert) at the Biotechnology Institute at the University of Minnesota Twin Cities, he started a faculty position at the Catholic University of Korea until January 2023. He is now an assistant professor at the Department of Food Science and Biotechnology at Seoul National University of Science and Technology. His research is focused on precision fermentation with metabolic engineering of food microorganisms to produce functional food ingredients and value-added bioproducts such as natural products, nutraceuticals, biochemicals, and industrial enzymes from renewable biomass. He is also interested in gut microbiome engineering with probiotics and prebiotics from Korean traditional foods.
