In the realm of graphic design, I believe Adobe Photoshop to be quintessential, as it is not only the foundation of most other Adobe programs, but also can serve a multitude of purposes that whilst other programs may be better suited to take care of, they don't have the flexibility and accessibility Photoshop has.
