Restoration
Restoration is a detailed process that involves stripping the cookware down to bare metal and slowly building the seasoning back from there. Restoration would be best in cases where your cookware:
has surface rust
has heavy buildup from cooking
has crud/old oil built up on cooking surfaces
hasn't been used in years and needs some TLC
Seasoning
Seasoning involves adding oil to the cookware and baking it to "lock in" the oil and help protect the cast iron. This also creates a cooking surface that is easier to use and less likely to stick. Seasoning is best in cases where your cookware:
is generally in good shape but requires some touching up
has dulled or lost some of the seasoning
is clean, but has been sticking more
has spotty or splotchy areas from oil
