INGREDIENTS
32 large shrimp
COATING
1 C shredded coconut
1/4 C olive oil
1 C bread crumbs
2 garlic cloves (minced)
1/4 C parsley (chopped)
1/2 lemon (juiced)
1 tsp salt
1 tsp
pepper
MANGO SALSA
1 mango
1 can tropical fruit mix (15 oz) diced smaller
2 T cilantro (minced)
1 scallion (chopped)
1/2 lime (juiced)
1 jalapeno (diced, seeds removed)

Soak 8 skewers in water 30 minutes.
Place coconut on baking sheet and bake at 350 for 10 minutes until brown. Remove and cool 5 minutes.
Place shrimp in oil and toss to cover.
Combine coating ingredients and coat each piece well.
Chill 30 minutes.
Preheat grill to high.
Thread shrimp on skewers and grill 2 minutes each side.
Serve with salsa.
