1 lb of boneless chicken breast
Marinade:
½ cup lime juice (approx. 4 limes, juiced)
3 tsp. lime zest
¼ cup olive oil
4 Tbsp fresh cilantro or parsley, finely chopped
2 jalapenos, finely chopped (optional)
4 garlic cloves, crushed
1 Tbsp honey
salt (to taste)
pepper (to taste)
1 Tbsp chili powder
Mix all of the marinade ingredients together in a bowl. Marinate chicken for 2 hours or overnight.
3 options for cooking the chicken:
1. Grill 5-6 minutes per side
2. Sautee in a pan 5 minutes per side
3. Bake at 400 for 20 minutes (10 minutes per side)
Cook chicken until it’s no longer pink, juices run clear and/or cooked through.
Serve with grilled zucchini seasoned with garlic powder, onion powder, parsley, salt & pepper. You can also drizzle some of the marinade mixture over it, before adding the chicken to it.
Serve with a baked sweet potato, brown rice or quinoa.
