Welcome to Menu Wars! Menu wars is where our Food Lit class has a food competition where we are in two teams competing against each other. My team's theme was Summer, and our restaurant name was Final Destination because for us seniors, this class is our final destination and s also has a summery vacation feel. I decided to make tropical mini cheesecakes because I have never made cheesecake before and wanted to try and it is also a light, fruity, dessert!

This was the first time that we made our dishes! I have never made a cheesecake before, so this was a bit of a trial and error.
I started by mixing all of my ingredients for the cheesecake. I used a blender for the filling and food processor for the crust so this part wasn't too hard. Although right when it was ready for the small, individual sized pans I had imagined, I found out that hadn't arrived in the mail yet so I had to improvise! I instead found a six inch springform pan to use instead. When it came out of the oven, it was perfect! Then I tried to make the mango jelly and it came out terrible! I was afraid that not enough gelatin would be added so I put in a little bit too much and it solidified before even going onto the cheesecake. So, timing would be something that I would have to focus on.

Round 2 was definitely better! I was finally able to bake the cheesecakes into the small tins, and even though I thought the pans looked too small at first, they ended up being the perfect bite size! This time I did everything else as normal, and it went pretty smooth. I realized that before I used the full recipe and in these small tins it made almost twice as much as I really needed.
I tried putting together a garnish, and it didn't look quite how I liked but it was a start. After having an idea of what kind of garnish I wanted, I started thinking more how I was going to pull off the plating.

This was the final round! I made the cheesecakes and mango jelly a lot earlier in advance, so they were fully set by the time the judges came. Chef bought me a dragonfruit for garnish and I also used some strawberry puree from Jaron's drink mixture. In the end, I am very impressed with how these came out and the judges loved them!
