Bonjour Bakery with Jane Beedle Tickets On Sale Now!
In this day and age everyone is so busy and have their own priorities whether that be an education, a social life or a job, people don't really have the time to bake. So this Rocky Road is a great and easy recipe for anyone who enjoys baking but hasn't necessarily got the time or isn't the best baker (just like me). I decided to use Kitchen Masons recipe as inspiration for this bake as I love Lotus Biscoff so I thought I would put a twist on a classic sweet treat.

For this bake you will need a square baking tin preferably 20cm (8") and a disposable piping bag/food bag. It will take 15 minutes to make and at least a hour to set.
First things first, weigh out all your ingredients and put the measured ingredients into separate bowls.
Next step is to lightly grease and line your tin then put it to the side until you are ready to put the mixture into the tin.
Combine the white chocolate (which is broke into pieces), the butter and lotus spread in a microwavable bowl. Once combined, place into a microwave for 20 seconds. After 20 second, remove the bowl from the microwave and stir it then place in back in microwave. Repeat this process until its smooth and all melted.
In the bowl, where the melted butter, white chocolate and lotus spread is combine the dry ingredients of the fudge pieces, the mini marshmallows and the lotus biscuits, then mix. Once mixed together pour the mixture into your baking tray and make sure all the mixture is pressed into the tray.
After the mixture is in the tin, then put this in your fridge for at least an hour and it is properly set.
Once the Rocky Road is fully set, take it out and cut it up in any way you want. You can cut it up into 16 pieces or a mix of bigger and smaller pieces.
To decorate the Rocky Road you can use two different options.
The way I decorated them was by melting two tablespoons of Lotus spread in the microwave then with a fork, put some of the melted spread on the fork and drizzle it over the rocky road pieces.
Another method which could be used is melting the Biscoff spread in a piping bag and melt in the microwave for 20 seconds. When melted, pipe the liquid over each square.
Once decorated, leave to set at room temperature.
Once set, serve and enjoy.
