Moin-moin or moi-moi (Yoruba)
It is a steamed or boiled bean pudding made from a mixture of washed and peeled beans and onions, fresh red peppers, spices, and often fish, eggs, and/or crayfish. It is a protein-rich Yoruba food that is commonly eaten across Yorubaland and close regions in West Africa.
How to prepare?
2 1/2 cups of BEANS FLOUR BY FORA
1 onion
Boiled eggs
1 cup Vegetable oil
1/2 tsp Salt
1/2 cup hot water
1/2 cup stock
leaves Uma
cubes Seasoning
Cooking instructions?
Wash your onion and red bell pepper, scotch bonnet, chop your onion and transfer into your blender..
Add in your beans flour, hot water, and stock.. Cover and blend it all together for 3 mins..

Transfer into a bowl, add in your salt, crayfish, seasoning cubes and vegetable oil and mix it all together..
Wash and fold your uma leaves or your preffered package, pour in some moi moi batter, add some eggs and fish, then close it up properly..
Set your pot on low heat, add in 1½ cup of water, place some uma leaves at the bottom of your pot, drop in your wrapped moi moi and cook for about 25 - 30 minutes.. YOUR MOI-MOI IS READY WITH BEANS FLOUR BY FORA!
